General Nutrition

X18 (3 semester units in Nutritional Sciences)

Intended for students in health-related careers or those who want a better understanding of the subject, this course explodes many of the popular myths about nutrition and gives you a foundation for making wise nutritional choices. You learn about dietary nutrients and toxicants and the role of nutrition in optimal health. Topics covered include macro- and micro-nutrient needs; how to determine individual caloric and nutrient needs; digestion and absorption; nutrient requirements in various stages of human development; and current food issues, including food safety.

Prerequisite: A background in high school or introductory college-level chemistry, biology, or physiology is recommended but not required.
